A return to roots.

A sense of place.

Switzerland is home. Its forests, mountains and changing seasons give Nathan’s exploration a setting, from the landscape to the textures of the kitchen.

Useful to know

Before we begin.

Where are you based, and where do you work?

I’m based in Zurich, Switzerland, and mainly work around Zurich, St. Moritz, Gstaad and Verbier. Internationally on request.

What services do you offer?

I offer private dining, culinary consulting and hands-on cooking masterclasses. Each dinner, project or class is shaped around what you have in mind.

How many guests can you cook for?

I cook for private dinners from two guests up to events for 200. For larger events, I work with a team.

What do you bring for a private dinner?

I arrive with my mise en place prepared and bring my knives and any equipment needed. Table settings can also be hired if required.

How is private dining priced, and what is included?

I quote each dinner or event individually. The quote includes food, my preparation and working hours, plus staff, travel and rental equipment where required. We’ll agree the scope and costs before confirming.

Can you accommodate allergies and special diets?

I can plan menus around allergies and special diets, including paleo, keto and vegan preferences. I also have experience cooking for pregnant guests. Please share your requirements when you enquire so we can discuss them before confirming the menu.

How far ahead should I enquire?

You’re always welcome to ask, including at short notice. I’ll let you know what is possible for your date and plans.

Where do masterclasses take place, and who are they for?

My masterclasses take place in your home or at venues such as klein16.ch. They’re for people starting to cook and for those looking to develop their skills. We might explore handling fish and seafood, creating umami or getting the timing right. The aim is a good time together and useful skills for your next dinner party.

What can you help with through culinary consulting?

I help with menu planning and recipe refinement, purchasing guidance, restaurant concepts and kitchen design consulting. We’ll discuss your objectives and agree the scope, timing and fees for your project.

What influences your cooking?

I’m reconnecting with my mother’s Māori heritage. My evolving culinary identity is shaped by Swiss nature and expressed through Japanese flavours and techniques.

How do I confirm a booking, and when is payment due?

An enquiry starts a conversation; it does not confirm a booking. Once you accept my offer, a 20% deposit is due immediately. For events of 20 or more guests, full prepayment is due five days before the event.

What are your cancellation terms?

For events with fewer than 20 guests, if you cancel more than two weeks before the event and preparation has not started, I’ll refund your 20% deposit. This refund condition does not apply to events of 20 or more guests. The cancellation charge is 50% from two weeks before the event and 100% from one week before the event or less.

How can I enquire?

Tell me what you have in mind through the enquiry form. Include your preferred service, date, location and a few details about your occasion or project. I’ll get back to you to discuss the details. You can also email me or call +41 78 849 54 29.
